Antica practices the 130 year old art of traditional Neapolitan pizza made in accordance to the rules and regulations of master pizza mak- ers of Naples, Italy through their Associazione Verace Pizza Napoletana (AVPN). We start with the world's best flour, Antimo Caputo Tipo 00. We cold proof the dough for 24 hours. We add only fresh, minimally processed ingredients.The San Marzano tomatoes ripened on the foothills of Mt. Vesuvius.The olive oil is estate produced. The Bufala cheese is made in Naples. We stopped here about 30 minutes before they close, the kitchen closes, but they don't kick you out at closing time, they have beer and wine and soft drinks. The pizzas come from a woodfired oven....
