Upscale, but casual, Blue Coyote maintains a welcoming decor with indoor-outdoor restaurant seating and a wonderful view of our main hotel pool and the adjacent fountain. Those items include the best fresh omelets, specialty sandwiches as well as various salads and soups. Most recently, Blue Coyote has added a full sushi menu including Nigiri, Sashimi and rolls like Alaska, Rainbow and Boston. Sushi is served daily from 11am - 10pm, Blue Coyote also offers happy hour Monday through Friday from 4pm - 7pm.
