We believe that using what the Nature gives us, respecting its times and ways, is the best path to invigorate the traditional cooking, especially that from Trentino. Today, like as never before, we need to go back to the past, to revalue fragrances and flavours derived from the raw materials' genuineness. The chef Luca Cattoni, thanks to his skills, creativity and the tradition, will be able to knead and create dishes like the ones of our grandmothers that bring us back to our childhood, when we saw them busy around the house fire. The fulfillment of this project started from an accurate research which allowed us to select the best farms, ranches and cellars that guarantee us ideal and perfect products for our menu.
