VEGETARIAN RESTAURANT MADRE TIERRA TOLEDO It is a vegetarian restaurant with dishes made from organic products, with vegan options. On the menu we find starters, such as tempura or vegetable croquettes, salads, soups and creams, rice and pasta, pizzas with original mixes, tofu and seitan, and desserts. For vegans, there are excellent plate deals. All of this can be savored with a good organic wine and topped off with an eco-friendly tea. To start, we recommend the vegan sushi option, which had avocado, carrot, corn, cucumber, with hot sauces and tamari. Followed by a lasagna with mushrooms, shiitake mushrooms and boletus that is simply spectacular. It can be served with hot seed bread.
