I wanted to create in my village of Ariege a local restaurant dual vocation, taste and heritage, to show how good our products mountains are the fruit of this exceptional territory . Because I love these Pyrenean mountains, because our profession of breeder shapes for generations mountain areas, from the bottom of the Ariege valleys to peaks.
